I’ve been in a bit of a blogging slump over the summer….just way too much going on! With the start of a new school year and a new routine, I decided that I would once again try to be a little more consistent with my blogging. What better way to “get back in the game” than by linking up over at Homegrown Learners for What’s For Dinner Wednesday! So, here’s what we had for dinner tonight…Chicken and Dressing casserole. Everyone in my family loves this good southern comfort food, and it’s really pretty quick and easy to make. Serve it along with brown rice, green beans and cranberry sauce and you’ve got a great meal in a short period of time!
Chicken and Dressing Casserole
4 chix breasts…cooked and cut into bite-size pieces (be sure to save the broth)
1 can cream of chicken soup
1 can cream of celery soup
1 stick of margarine, melted
1 small pkg Pepperidge Farm corn bread stuffing
Place chicken in a 9×13 dish. Combine soups and 1 1/4 cups broth and pour over chicken. Mix melted margarine, and 1 cup broth. Mix in stuffing mix and spread over chicken. Bake for 35 minutes at 350 degrees.
