What’s For Dinner Wednesday? August 31, 2011

I’ve been in a bit of a blogging slump over the summer….just way too much going on!  With the start of a new school year and a new routine, I decided that I would once again try to be a little more consistent with my blogging.  What better way to “get back in the game” than by linking up over at Homegrown Learners for What’s For Dinner Wednesday!  So, here’s what we had for dinner tonight…Chicken and Dressing casserole.  Everyone in my family loves this good southern comfort food, and it’s really pretty quick and easy to make.  Serve it along with brown rice, green beans and cranberry sauce and you’ve got a great meal in a short period of time!

Chicken and Dressing Casserole

4 chix breasts…cooked and cut into bite-size pieces (be sure to save the broth)

1 can cream of chicken soup

1 can cream of celery soup

1 stick of margarine, melted

1 small pkg Pepperidge Farm corn bread stuffing

Place chicken in a 9×13 dish.  Combine soups and 1 1/4 cups broth and pour over chicken.  Mix melted margarine, and 1 cup broth.  Mix in stuffing mix and spread over chicken.  Bake for 35 minutes at 350 degrees.

Book Review: Life Without Limits August 27, 2011

I just got back from a week at the beach!  While I was there, I was able to catch up on some of my reading.  One of the books that I read was Life Without Limits by Nick Vujicic.  Nick was born with no arms or legs.  The book is about the obstacles and challenges that Nick faced growing up and how he has chosen to focus on the positives rather than the negatives in his life.  Nick refuses to let his physical disabilities get in the way of living a full, exciting life!  He travels around the world sharing hope and encouragement with all that he comes into contact with.  I was definitely challenged to be more aware of the blessings in my life that I often take for granted.  Reading Nick’s story has helped me to realize how my small “trials” in life pale in comparison to so many of those around me.  I really enjoyed this book and would encourage others to read it!

Book Review: The Grace of God August 20, 2011

I recently read The Grace of God by Andy Stanley. I have always enjoyed listening to Andy speak but, this was the first time that I have ever read anything that he has written. I must admit, I had a really hard time getting into this book. I really don’t know why…maybe it’s the style of writing? I liked what he had to say, but for some reason I just really had to make myself read it. I think Andy Stanley is an excellent speaker, but for me, this book was just “ok”. Have you read this book? What did you think?

Women Of Faith Was GREAT!!!

(Sorry the picture quality is not so great..not sure why?!?) My Mom and I attended the Women of Faith conference in Atlanta on August 12/13. It was a great conference and we enjoyed it SO much!! The speakers, the music, the atmosphere….everything was wonderful!! Unfortunately, we missed the Friday night session, but we were there for the Friday daytime session and all day on Saturday. It’s hard to pick a favorite speaker. Sheila Walsh, Stephen Arterburn, Angie Smith, Nicole Johnson, Luci Swindoll….all were great!! The musical guests included Mary Mary, Laura Story and Natalie Grant. We didn’t get to hear Natalie Grant…guess she performed Friday night. I was so blessed to hear Laura Story singing her song “Blessings”, and to hear a bit of her testimony. I didn’t realize that she lives right here in Atlanta! Thanks again to BookSneeze and Thomas Nelson publishers for the tickets!

 

I’m Going……Are You??? August 4, 2011

I am SO excited!! I am going to the Women of Faith conference in Atlanta!!! Several weeks back, I received an email from BookSneeze saying that they had partnered with Womem of Faith to give away FREE tickets to bloggers for the event. They had a limited number of tickets for each location. I completed the form and figured I wouldn’t hear back from them. BUT…several weeks later, I received two tickets in the mail!! The conference is August 12 and 13. It’s a great line-up of speakers and artists. I’m taking my Mom with me! It’s going to be great to be able to spend the weekend with her. Can’t wait to see what the Lord has in store for me!!
