A New (Old) Recipe…Company Muffins February 15, 2011

Filed under: Uncategorized — sandra @ 12:52 pm

One of my goals for this year is to be better at trying out new recipes.  I have tried some new ones, but I keep forgetting to post about them!  Yesterday, I made Company Muffins.  It’s not really a new recipe, but I haven’t made it in a long time.  These muffins are really quick and easy to make and SO delicious, so I thought I’d share the recipe with you!  A word of warning, though….these are NOT low-cal!!  Guess that’s one reason that I don’t make them too often!

2 cups Bisquick

1 cup sour cream

1/2 cup melted butter

Mix all ingredients and spoon into sprayed muffin tins.  Bake for approx. 15-20 mins (until brown) in a 375 degree oven.

That’s it and they are delicious!!  If you decide to try them, let me know what you think!

Crock Pot Cooking February 14, 2011

Filed under: Uncategorized — sandra @ 12:59 pm

This morning, I was once again reminded of how much I LOVE using my crock pot!!  It’s so nice to have dinner practically made before it’s even time for lunch!!  The late afternoons/evenings can get so hectic…it’s a great timesaver to have dinner nearly ready before that dinnertime hour rolls around!  I would really love to use my crock pot more often, but I don’t have a lot of tried and true recipes.  I’ve got some slow cooker recipe books and have bookmarked a few websites, but I’d really love to have some recipes that some of you really love…some that are quick and easy!  I’ve got some of my favorites that I use fairly often, but I’d love to try some new ones.  So, would any of you like to share a crock pot favorite?

This morning, I just put in a roast, potatoes and carrots.  Later this afternoon, I’ll had a gravy made of Lipton onion soup mix and cream of mushroom soup.  Add to that a pot of green beans and some rolls and we’re all set!

Tomorrow’s menu is for chicken enchiladas.  I will put some bone-in chicken breasts in the crock pot in the morning.  By afternoon, they’ll be done and I’ll take the meat off the bone and shred it for the enchiladas!

What are some of your tried and true crock pot recipes???

Booking It….January Results February 11, 2011

Filed under: Uncategorized — sandra @ 7:26 pm

As I mentioned here, this year I am participating in Life as Mom’s Booking It challenge.  So, here’s how I’m doing so far.  For the month of January I read three books:

1.  I Will Carry You by Angie Smith (review here)

2.  Crazy Love by Francis Chan (review here)

3.  The Happiness Project by Gretchen Rubin (review here)

I’m really enjoying reading more this year, although it is often difficult to make the time to do it!!  What about you?  Did you read any good books in January??
