I did a little baking this evening!  Not much…just a couple of things.  First, I had some bananas that were starting to go bad, so I decided to make banana chocolate chip muffins!  These are SO good and somewhat healthy since they’re made with fresh ground whole wheat flour.  They are also sweetened with honey instead of sugar.

Just mix ’em up and put them in muffin tins!

When they’re done, enjoy one with a hot cup of coffee!!!  YUM!!

What do you do with bananas that are going bad?

Next was my first attempt at making homemade croutons.  I received advice from several people and came up with my own recipe.  Basically I used olive oil, sea salt, garlic powder, parsley and parmesan cheese.

Spread onto a cookie sheet and bake at 275 until crispy.  Here’s the finished product:

They turned out really good!!!  They may not make it into a salad…we may just end up eating them plain!  Will definitely have to make these again!

“Eat From Your Stockpile” Menu February 26, 2010

I’ve scoured my pantry and freezer and this is what I’ve come up with for my “Eat From Your Stockpile” menu.

Monday:

Breakfast…Cheese grits and toast

Lunch…..Pizza and fruit

Dinner…Poppyseed Chicken, Julienne potatoes, broccoli

Tuesday:

Breakfast…Scrambled eggs and muffins

Lunch…Hotdogs and yogurt or chips

Dinner…Lasagna, salad, garlic bread

Wednesday:

Breakfast…Pancakes and sausage

Lunch….Mac and cheese and fruit

Dinner….Leftovers

Thursday:

Breakfast…Cereal

Lunch….Sandwiches and chips

Dinner….Swiss chicken, brown rice and green beans

Friday:

Breakfast….Fried eggs, hashbrowns and biscuits

Lunch….Sandwiches, chips and fruit

Dinner….London Broil, baked potatoes, and green bean casserole

Eating From the Stockpile!

My totals for February have ended up being a little higher than I like, so I decided to start the month of March out right!  I am challenging myself to “Eat From the Stockpile” for the first week of the month!  I’ll be going through my pantry and freezer later today and making a meal plan based on what I already have on hand.  Hopefully, it won’t be too difficult to come up with a plan!  I’m hoping that this will help to lower my totals for March.  I’ll still be grocery shopping, but only for the things I’ll actually need to fill in any gaps in my menu plan.  I’ll also pick up any of the great deals that I just can’t pass up!  Would you like to join me in this challenge?  If so, start getting your menu together, and you can join me in posting them later today or tomorrow!  So….are you in?!?!

 

Homemade Croutons February 25, 2010

I am thinking about attempting to make homemade croutons in the next couple of days.  Have any of you ever had success at doing this?  I have lots of end pieces of bread loaves that I was thinking about using.  Do you have a recipe that you could share with me?

I rarely go to Target, but since I was in the area, I thought I would stop in and work a few deals!!!  Glad I did!  I got everything in this picture for 1.36 + tax!!!
